Is the extra material in the water jackets the only thing different on the block? Of is there other changes as well?

Right on, get Ford some results as fast as you can so they can get that block out to market. I'm jealous man, would be nice to not have that nagging thought in the back of the mind that a cylinder might eat it.

Not sure if i'm going to continue the stage 1' jpc's i'm running now, or step it up.

I wonder if reduced water jacket area will make these blocks run hotter?

I doubt it . Will only be 1-2mm thicker .. They are thin now .. So doubling them won't hurt those nice water jackets ..
