Ha! It turned out great. The smoke added a really good flavor. I'll make it like this going forward.

I also stopped spraying and started doing a "Carolina Mop Sauce" every hr from hr 4 on, bark has drastically improved.

Thanks. We do beans very similar on the smoker, 3 hours. Top notch hit with anyone who's tried them.All in took about 4 hours. I cooked the beef until it hit 150 and then broke it up and put it in the chili. It was about 2 hours to hit 150 and I cooked for another 2 with it in. The last 2 was mainly because that's when we were ready to eat.
I followed this recipe. It's a solid recipe but has basically no spice. When I do it again I'll add some peppers to spice it up.
