Turned out great. First time I didn't wrap it. Just sprayed it with apple juice every 45 minutes. View attachment 1829229

Wrapping in either a full wrap or boat certainly saves some time but mine have come out better with no wraps (if you've got the time).

I also stopped spraying and started doing a "Carolina Mop Sauce" every hr from hr 4 on, bark has drastically improved.

The bark was awesome without wrapping so if mopping instead of spraying improves it I'll give it a try. Do you buy the mop sauce or make it?

How long after did you break up the ground beef? I understand maybe getting some fat drippings.

All in took about 4 hours. I cooked the beef until it hit 150 and then broke it up and put it in the chili. It was about 2 hours to hit 150 and I cooked for another 2 with it in. The last 2 was mainly because that's when we were ready to eat.

I followed this recipe. It's a solid recipe but has basically no spice. When I do it again I'll add some peppers to spice it up.

Thanks. We do beans very similar on the smoker, 3 hours. Top notch hit with anyone who's tried them.
