I love flank. Very underrated cut of beef. You rarely find it restaurants. It's lean with just the right amount of juice to make it good.First time cooking flank steak tonight. Came out pretty good. Wife made a marinade and it sat in that overnight. Got the BGE to 500° and cooked for 4 minutes per side. Flavor was good, still prefer a ribeye.

My new favorite method is oven first at 250 and then searing in the cast ironI prefer flat iron over flank, but refuse to pay $8-9/pound for either. I can get prime strip for that at Costco.
I like cooking either of them by searing in a screaming hot cast iron skillet then finishing in a 450 degree oven.
