How did you make your meatloaf?

Anytime my man!!!

I use ground hamburg, usually 90% lean 10% fat or 85%/15%.
Ground pork.
Two eggs
Some breadcrumbs.
Spread ketchup over the top with the back side of a spoon.
Mix and mold into shape. Some oil on the bottom of the pan.


Ketchup or No Ketchup? That's the Question..lol

Definitely ketchup.
Sounds good. I usually add a little ground Italian sausage to give it a little kick.
Saw a recipe the other week where the bread crumbs are substituted with crumbled Cheez-Its.

Definitely ketchup.
Try a shot of yellow mustard mixed with ketchup and a little brown sugar to spread on top. Nice sweet tang. Also this may sound kinda crazy but sometimes, last night in fact. I take leftover meatloaf and smash it up mix it with marinara sauce add parmesan reggiano cheese, red pepper flake and eat it with spaghetti. Add a little of the pasta water to the sauce and reduce until it thickens up a bit. Just something different with leftovers.

Another one I like is grilled meatloaf/cheese sandwich.
I microwave the leftover meatloaf first, put it on Italian bread with either Mozzarella or Muenster or American and then put it on the sandwich grill.

Homemade chili tonight. (Texas boys please scroll on as I put beans in it.)

Half a pound of flat iron steak and half a pound of ground beef
Tomato sauce
Tomato paste
Diced onion and diced poblano pepper and diced vine ripe tomato
Red kidney beans soaked for 90 minutes
Cumin
Black pepper
Garlic powder
Smoked paprika
Chili powder

Will top with sour cream, avocado and shredded cheddar.

Also will have a side of crusty Italian bread.

Currently simmering till dinner time.

I've won 2 chili Military Command cook-offs with my chili. I say mine but its not really mine. I use this off the shelf and add hamburger meat, shredded beef I've cooked till it's softened and sometimes Jimmy Dean Hot and Spicy Sausage. Absolutely add beans both light and dark red kidney beans. An onion, some diced tomatoes, some tomato sauce. I use about half the chili seasoning in this packet.
