Fire makes HOT......smoke makes BETTER!!
Because cooking at 700* over 100% natural lump charcoal is better than an oven. Did you realize smoke comes from fire or nah? I'm not trying to smoke a pizza here.
Don't Pizza places use REALLY HOT ovens??
We use a cooker that cooks both sides and rotates......does pretty good since I don't have a BIG grill like you have!!

700 degrees isn't REALLY HOT? It was hot enough to cook that pizza in like 6 minutes. A BGE will push over 800 degrees. I was choking it down to keep it around 700.
Had some huge pork chops and sweet potato's last night....
