Oak smoke Todd. Not to heavy. Beans are killer, I tried them.
What species of oak? Does it even matter? I don't have a smoker so I don't know much about it.

Unlike smoking pork I can never get a solid ring on brisket even if I blast it with consistent solid smoke. Maybe it is because I don't trim the fat cap. I'd rather the candy taste than a color. Besides that faux pas, the bark, flavor, juiciness and consistency are all to my approval.

I normally use pecan and apple wood. Great smoke flavor.
