I think they have been discontinued

It says right on their website they are discontinued and they even recommend a similar replacement.

Yep, you're correct, the G-5 thermostat for the GT-500 is discontinued I didn't know it was no longer available. I see that Joel recommends the Motorad 354-180 180° thermostat.
