IAT2 and coolant temp questions

When I am in the highway I normally see 110-120d on my IAT2's and 183-186d on my coolant level..
But when I am off the highway I normally sit at 125-130d IAT2's and 205-208d coolant (never goes past 210 even after WOT).. that is on a 80-90d weather we have been getting here in Va Beach.

Are those good temps? or should I have my fans come on sooner?

Noob question.. can someone explain what IAT2 is? what is IAT1? etc etc.. or at least point me int he right direction.. searching right after I type this.. sorry

IAT Intake Air Temperature

IAT 1 is your ambient temperature which is located right after your MAF
IAT 2 is your intake temperature which is located right behind your (inside)blower

and...the MAP sensor is built into the IAT2 sensor.
