So I have a 2011 gt500 I had the original motor replaced with a stock low milage motor. The replacement motor had about 10000 miles on it and I managed to put 2000 on the new motor before my car started running extremely rich. And I got the fuel pressure code. I looked at the sensor in the trunk and realized there was a bap hooked up. Would that cause my car to run rich and should I unhook the bap as my car is all stock?

Yeah, a fuel pump booster with no change in the returnless fuel pump voltage table.

If that was a surprise you may want to find out what injectors are in it and if there was at one point a custom tune.

Also if you have an aftermarket cold air and no tune, the same thing can happen

The replacement motor is all stock the motor in my before was full bolt on with a vmp tvs but the owner before failed to upgrade the injectors so it ran lean
