i've only test 2 very good restaurant in las vegas during a road trip. Joel Robuchon in the MGM, and the top of the world in the stratosphere...but it's a little expansive...
you eat better at Joel Robuchon, but the view in the stratosphere is awesome...

If you love pasta and you are extremely hungry, go to Carmine's located in the forum shops at Caesars.
The pasta is served on a platter instead of a plate, and it's delicious.

Serendipity for breakfest. Massive portions so you can skip lunch. Cut for Dinner. Best steak (Wagyu sampler) I've ever had. Service was on point. Dinner tab was about $350-400 for two, so come prepared with your craps winnings.

You gotta try the hidden pizza place at the Cosmopolitan. We would order a couple of pizza's, walk across the street to Walgreen's where everyone would get a six-pack, and go back to pick up the pies. Then we would hang out in the common area (or whatever it is) drink and eat pizza.

How hidden is it

I can't find my keys on a daily basis

It's not too hard to find. Its down a hallway that isn't labeled (it's not in the directory either IIRC), but if you Google it you will find directions.

Try the Double Down Saloon for drinks too. It's near UNLV and they used to show porn flicks until too many bitched and they yanked it in favor of cheap horror flicks. Haven't been in a while but it was a good, cheap dive bar with Ass Juice on the drink menu.

I'm not much of a foodie and hate buffets but Gordon Ramsay inside Paris is an awesome steak joint although you will need $$$$. Their baked potatoes are almost the size of a friggin' football.

I just got back from Las Vegas yesterday. Was there for Amazon AWS conference. Stayed at Palazzo. Amazing hotel, very high end.

I can tell you what to avoid - Bouchon in Venetian. It took our food 2 hours to come out, and when it finally did it was medicore. It was also very expensive. My party of 15 negotiated $800 off the bill because it was so terrible. They were lucky we didn't just walk out before our food arrived.

Bellagio buffet is good. Be prepared to wait, though. My parents stayed at Palazzo for part of their stay last year. Very nice room with sunken living room. They had a nice view of the Wynn golf course next door and we enjoyed cocktails by the window at sunset. I was not impressed with Palazzo's pools though. Too small and crowded.

I love Fremont Street! I work in south Baltimore, Fremont is a walk in the park compared to there lol.

Was in Vegas just a few weeks ago...Nothing fancy but my wife and I always find ourselves eating at Nine Fine Irishmen in NYNY. I highly recommend the shepherd's pie or the chicken pot pie.
