Yet another Thermostat Question

I've done some searches and read the results but I don't see one that is specific to my application so I'll ask it....

I'm doing a coolant crossover delete on my 01 cobra and am thinking about removing the thermostat. I see multiple threads that state this is a bad idea because you have potential to recirculate coolant that has not gone through the radiator. This is all good and I understand it, but what if I remove the bypass line as well? I'm thinking that this will force 100% of the coolant through the radiator and would help to keep the car cooler.

I live in NC so the summers are hot and humid, the car only sees 2-3K miles a year and does not get driven in winter so I'm not super concerned with how long it takes to heat up.

I'm looking to hear any pros and cons and feedback from people who are currently running a setup similar to this.

Why not just put a reiche 170 thermostat on? You want to run the car at proper operating temp, too cold all the time is not a good thing.
