What is missing from the Xcal 3 that the newer models have? I see that CFM is offering a sale on them, but are they still relevant?

X3 is still relevant, but the older model. The X4 is smaller and has a larger screen. And when logging parameters on screen you can set it up a whole bunch of different ways with gauges, analog readout, you can do portrait or landscape and you can get a mount for it for your windshield. I think it has more memory as well. I have the x4 now and love it.
