Ribs on the Big Green Egg now. Just went to one of my fields and dug some fresh new potatoes and gonna start cooking them now. Dunno what else. Maybe make a bruschetta appetizer, salad. Ice cream sundaes for the finale though! Enjoy!
I have an uncle and his gf visiting so I'm treating them, my fiancée, and myself.
Last night we had my dry aged tenderloin with garlic mashed and asparagus. It was between 45 and 55 days. I won't dry age a tenderloin that long again. It was delicious but I lost too much of the meat to the crust. I'll stick to the ribeyes, sirloins, strips, etc for dry aging. Instead of cooking one steak for one specific person, I tried to make a range of doneness that I would slice up and have them pick whatever pieces they wanted.
Tonight we had seared wasabi tuna steaks topped with cucumber vinaigrette, side of yellow rice.
Chicken wings/drumsticks. She had bbq, I had hot (franks+tabasco). I used the sousvide cooker 168 for 1 hr and then broiled them for about 4min/side
Velveta shells
Spatchcock chicken and corn on the BGE, 3 ears of corn I let cook indirect with the chicken, 3 other ears I grilled direct on the mini. Both were great. Wife made pasta salad, and corn bread. Beans came from a can.
