I did a google search on castle bold and found what appears to be a few different versions, URW, EF, and T-bold being the most popular.

Also I noticed these all seem to be solid letter vice the open lettering we have on out seats.

Is it an outline of the font?

You can outline most any font in Photoshop and make the font transparent and the outline any color you want using the stroke command in the layer. Like this:

If you have access to Corel it's even simpler to do, just right click the color you want the border, left click the X for the font color and all you have is an outline. I would assume that Illustrator is somewhat similar to Corel.
