Those that have restored a classic '65 help me out

I know this is a very broad stroke of a question, but help me out on what I could expect to restore a '65 convertible. I am not looking for a show car, just something that has been done very well and can be driven on any given day.

Car is in overall very nice condition. I am thinking it will require the following:

1. Engine rebuild - original 289 2bbl with 120,000 miles. Burns oil.
2. Maybe 10% body work to get some rough spots out
3. Paint job
4. Full floor pan replacement. Suffers from rocker panel rust through. Very small amounts
4. Full interior replacement - seats, carpet, etc
5. Misc mechanical replacements or rework - master cylinder, all brakes, heater core, some wiring

I can do some of the mechanical stuff myself. I wold have to farm out the painting/body work and engine rebuild.

I need to get serious on this project. Car has been in family for 20+ years ....
