Yeah...it should not run on the stock tune with 78lb/hr injectors. It should be stupid rich in that condition, in fact it shouldn't even run at that point. The only way it could run on the stock tune is if either fuel pressure is turned waaaaay down, or the MAF signal is turned way down (like the old "calibrated" MAF trick.)
I would also throw a mechanical fuel pressure gauge on to see what you're getting at the rail. And remember, the logged value and the rail pressure will be different. The logged value is a "delta" pressure, which is comparing it to manifold pressure, and the rail pressure will be a gauge pressure, referenced to atmosphere.
