Hello,was just wondering if running the stock tire in the front but a 315/35 in the back would create any handling issues at high speeds? lately my car feels a little unstable around the 100mph mark and i am trying to pinpoint the issue. Thought it was due to having the top down and it being windy but tried it with the top up and it still feels a bit shaky.

275/40 and 315/35 are the same height, within 0.1" inch or so and thousands of Mustangs run that combo so likely you have something else going on. Wheel alignment, worn steering or suspension parts, wheel bearings, axle nuts coming loose, tires worn crooked, etc.
