Most of the stuff I've read regarding converting to a hydraulic clutch is a huge pain in the ass.
Seems even the guys that have successfully done it still have issues with it a couple years later. I don't have any direct experience, but I have researched this topic before.

The cons of going hydraulic would be cost and extra work involved. The same performance can be achieved with a properly set up cable system and aftermarket quadrant.
