How can you tell if you are running lean or rich?

A dyno pull with the A/F ratio sampled, or install onboard wideband
The shade tree mechanic looks for excess carbon/black soot on the exhaust tips (rich), or listens for detonation (lean), a peek at the spark plugs will tell you quite a bit too.
