If you have a windows laptop can download forscan for free and get the dongle off Amazon (chorded or Bluetooth). You can actually record and play it back this way.
Or a Bluetooth obd2 dongle and like the torque app on your phone, not sure if that records though which means you’d have to be looking at it or have a passenger watch. The PIDs for fuel pressure should be easy to find
