Is there any danger in switching from a catted X pipe to an off-road X pipe without a new tune for a week or so?

Not really. If you're concerned just stay out of boost until you get the retune.
Figured as much but good to hear, one my UPR cats had all the material inside break apart and now it's rattling badly and clogging up the flow. For next week's tune I'll also be getting a smaller pulley to crank up the boost! Excited.
I had that happen on my Bassani. The car felt sluggish then suddenly I got all my power back and the car was a lot louder. I was thankful I had my Stingers when I realized the inside of the cat was shot out the exhaust.
