Mods while fuel tank is out?

I have my tank out to put in a fore hat, -8 supply, and twin gt pumps. Anything else I should do while its off? Ive noticed some guys get rid of some of the lines on the tank. What are, where do they go, how do I get rid of the system they go to, any down sides to doing that, any reason to do it?

Keep them, their for proper venting of the tank.
