Interior painting....how long between coats?

I've seen 3-4 hours to 24 hours to a Few guys saying it takes a week to "cure" between coats. I've always done 24 hours? Am I too old school? Is new latex based paint worlds ahead?

Water-based, it's dry enough to paint over in 30 min. I usually finish a room in a single day, including multiple coats if necessary.

Recent experiences, I've only waited about an hour or two between coats. Back when I was a kid and I used to help my uncle paint (15 years ago), we'd only do one coat per day.

1) Paint room with one coat
2) As soon as finished with first coat, start second where you started the first one

I've never waited more than an hour before rolling out a second coat. Interior paint is pretty much dry to the touch by then.
