Should I loctite the diff cover bolts? It doesn't say anything in the instruction sheet, but the stock bolts appear to have some on them. I have a lubelocker gasket and everything FTBR sells if that matters.

Do not put lock tight on the bolts. I used just a lube locker gasket with no RTV and it sealed perfectly. No leaks what so ever. You do need to use some PTFE thread sealant on the drain and fill caps. I learned that the hard way.....

Ford Grey RTV works great ...and is recommended by many people I know. +1 to thread sealant on the drain and fill caps.

Edited: no locklite on the cover bolts

The stock bolts, and ones that come with the aftermarket covers are small and low torque. They aren't subject to any condition that would cause them to back off, hence why putting lock tight on them makes no sense. Other than risking breaking them off when you try and pull the cover at a future date, then you'll have to enjoy drilling them out.
