Cooling question

1996 Cobra. Recently put in a new radiator, fan assembly and coolant reservoir. Yesterday I was at the junkyard and found a couple Mk8's and scored the crossover tubes from them as both had plugs that I was able to break free and were not stripped. I went to replace the plug in my crossover tube that the head is stripped out on, and as soon as it started to come out, coolant started to weep out which was expected. I grabbed the other plug to swap real quick and what was not expected was when I pulled the plug out and coolant shot out of the tube at least a foot in the air. Why would the block have pressurized coolant like this in it? Car had not been driven for minimum 12hrs, more like 16hrs, and coolant reservoir was the same level before and after the plug swap.
