Cooling problem question

I've searched but I'm stumped on this one.

It's a '96 Cobra with TSB completed. I've had no issues with cooling until last week. The car has 75K on it and cooling is all original except for the high speed fan switch and the high & low speed fan speeds are working.

I haven't overheated but it's been almost pegged on the stock temp gauge and at 250 on the Autometer which is tapped into the crossover tube.

Here's where it gets weird. This morning(about 32 outside) It was running fine after about 30 minutes of city driving until I turned on the heater. The temp then leaped to 250?

What's happening when I turn the heat on? Also, I have noticed that when it has been running over temp it will all of a sudden drop down to normal operating temps, so I figured the t-stat was possibly sticking?
