The hit to his head probably caused that reaction from his brain/central nervous system. Kind of like a chicken's body going nuts when you cut its head off.

On another note, the dude that gets shot in the head with the arrow is pretty sick!!

My guess is brain stem injury. When he rolled back the first time might have snapped something and then his body was reacting to electrical impulses.
