Air temperature/ boost question

Question 1: how important is ambient air temp in the factory gauge? (IAT1) I have a carbon fiber tube and a 123mm. The carbon fiber would always run the same temperature as it is outside while in motion. The 123mm runs 10-20 degrees higher if not more. Flow vs cooler air what wins?

Question 2: my 123mm makes the factory boost gauge run low 12psi max. Does the factory gauge matter at all? I have a upper pulley and know it is making more boost. Swapping back to the carbon fiber tube will show a dash reading around 17psi. I don't want to spend time and money on the dyno if it's not really worth it.
