500 HP, will I even need rear tires larger than 275's ???

Can you recommend an R compound in a 275 40 r17 other than the Toyo R888's???

I would try a sticky street tire first but keep the wear number at or under 200 and then they are not too bad if you are not too far over the 500rwhp mark.
