1997 Mustang 4.6 Vortech 18psi reaching 250 F and up when using A/C

Hey guys i have research this for hours and no forum seems to have a good advice and direction to go in
so i have a 1997 mustang gt 4.6L 2V with a DSS stroker out motor to 5.0 supercharged with a vortech si trim. i just recently put all new ac lines ac condenser. i have a griffin 3" rad with spal fan and shield, oil cooler and i installed a new stock temp thermostat. 8 rib pulley with stock water pump size pulley. Installed the paxton air to air inter cooler up front. its all a tight fit in the year mustang. it runs great. So running it the past few days ac works great got stuck in bumper to bumper traffic and the temp went so high 235 - 250 idling and seem to still be rising i shut the ac off when i saw it climb to 250 and it took awhile but the temp did drop down. Rad flushed using peak 400 with distilled water and redline waterwetter . brand new royal purple oil change.
i am wondering if i should change to a lower thermostat rather than the stock one. also wondering if modded the front bumper support to mount a pusher fan in front of the inter-cooler would help in stop and go traffic any advice an input welcomed.
When the ac is off the temp is at 196-204 ranges street or even getting on it on highway.It's only when the Ac is running that the issue comes up. these temp readings are from my SCT tuner monitoring the system as i drive.

Something isn't right here even with a stock temp range t stat you should not be having seeing temps that high.

Are you sure you burped the system correctly? These engines have been know to hold air pockets and this is why I always recommend burping the system with the car on ramps or the incline of a driveway whenever possible. I have had a similar issue but not with the AC on and it turned out to be air in the system.

Have you verified this ONLY happens with the AC on and that it wasn't just a coincidence? Those systems are completely separate and should not impact each other.

Are you sure your new t stat works? Stupid question I know but I've actually had one fail shortly out of the box one time in my life. I'll probably never see it again but its worth checking.

Are you sure your fan is running and kicking on at the correct time and temperature point? This is a big one because if you needed your AC then your fan should have been running as well.

Usually the answers to cooling problems is simplistic.

I disagree about the ac wouldn’t cause the vehicle to run hot. When the ac is hot, heat from the condenser is going to be hitting the radiator adding extra heat. I know, same thing happens to my daily Sonoma. I can’t run ac in 5oclock traffic in the heat of the summer because coolant temps will start creeping up. Turn the ac off, drops back down. my problem is v8 vs stock Sonoma radiator

Is the fan working? On max A/C, the fan should be on high at idle.

Is the replacement fan the same or better CFM as the stock fan?

I didn't say WON'T I said SHOULDN'T, big difference. Additionally just because you have a problem with your trucks A/C/cooling system and accept it as a norm does not mean that you don't still have a problem. If that is a known deficiency with that truck then so be it but I can tell you these cars are not know to have a similar problem.
