I'm playing around with a full S550 PP setup now, so all of this is fresh in my mind. You're right about the offset being different...here's the S550 rotor and caliper on an S197 spindle: I need to lay hands on a 13/14 GT500 rotor to be sure, but it looks like the offset difference is significant...nearly 0.75". The rotor surface is also thicker on the S550 at 1.34" versus the 13/14 GT500 at 1.26". No major concerns here though...I ran 1.25" Wilwood Superlites on 1.18" rotors for years including track duty, as have many of the people to whom I've sold kits. Ultimately SS lines would be best, ala the Russell kit at $115 through Amazon or $127 through Summit. It also includes 4 lines so you're set. If you want to do it on the cheapy cheap though, you can probably run OE lines DR3Z-2078-A and DR3Z-2078-B, $27.36 each through Tasca. These should be fine for street use as they're OE. I can check the brake lines that came with the S550 stuff to see if they're similar but ultimately you'd have to buy and try.
