Short headers ( with some minor grinding/modification ) with the stock exhaust is a great “ bolt in/on” modification. Even better if you add high flow cats. sounds fantastic and you will get a decent power increase.
You could be trying too hard with E85 conversion but getting rid of the horrible stock log style exhaust manifolds and installing headers ( long tubes or short tubes ) plus high flow cats will be a very great improvement
The matching jba high flow cats and mid pipe. The simple solution is to not getting a code is to install o2 simulators. There are a couple good american made stainless steel brands available on the internet.
The improvement is throughout the whole power band. And the high flow cats are an integral part of the improvement ( The stock cats/mid pipe reduce way down to about 1 3/4 " where they bolt up to the header collector which is a restriction ).

I like the jba’s because they bolt up to the stock mid pipe/cats and also because they are CARB compliant. And you can get jba’s mid pipe/high flow cats that also fit. No doubt long tubes are better but will not pass smog and will not bolt up to stock exhaust. Anyway you decide to go removing...
Fyi, if I remember correctly shelby lowers the engine so the bigger supercharger will fit under the hood. If so that will make it extra hard for any type of header ( long or short ) to fit. I think that is the main reason shelby leaves the stock log exhaust manifolds on when they do a super snake.
