What's the best way to pay for a car I'm having Shipped?

Hey guys. I found a car I want 700 miles away. I am going to have it shipped. What is the best way to make the transaction with the least amount of potential to get burned/scammed. I have spoken to the seller a handful of times and he seems like a standup guy. Telling my wife this, she is pretty concerned about sending money to someone long distance which I agree. does anyone have tips/experience with the best way to do it?? I have a 5 month old and really don't have the ability to go and get it myself. Any advise would be greatly appreciated. He has title in hand.

FedEx tracked certified check. I would have an agreement like pay him half, he sends title, then pay the rest. Or something along those lines

Escrow service is the safest. Otherwise I would wire funds, but only after a written, signed, and notarized contract to cover everyone.
