I own a 2016 Ford F150 Lariat Supercrew 4x4 with the 2nd gen Coyote. I purchased a set of Ford Performance cam covers and tried to get them powder coated but the company wants to disassemble them completely and ill have to buy new parts and seals to fix them. Is there any instructions for powder coating these?

they're not wrong - the powder that just kinda sticks to the seals and such will either 1) prevent them from actually sealing when put on the vehicle 2) loose powder that didn't adhere to metal is now free to find it's way into the motor.

if they're brand new and the seals are carefully removed I would think they would be re-usable

It takes 400* F to cure most powder coating. Anything that will not withstand the temp has to be removed.
