whats all the safety equipment thats used with NOS?

Blowdown tube, Low fuel pressure switch, pressure relief valve. That's about all I can think of :shrug: A lot of tracks require a blowdown tube.
If you are asking about required safety items, you'd have to contact the track you plan on running at and their sanctioning body. IHRA and NHRA do have a few different rules, as will non sanctioned tracks.

RPM window switch
WOT activation switch
Bottle warmer for safe temps (cold bottle = bad shot)
Blow down tube if required by track I frequent.
