Nitrous purging?

Was at MIR May 10th and saw many cars "purging" nitrous. What the heck is that when the poof of whatever rises out from the cars? Cool as hell looking but what's the theory. Thanks in advance.

It's to help get any air out of the lines so that when the nitrous is hit, there is no delay in the seat of the pants rush you get!
