Engine coolant temp settings

On my car’s tune, my tuner set the fans as:
High speed fan high load temp to turn on - 214
High speed fan off ECT - 214
High speed fan on ECT - 218
Low speed fan off ECT - 198
Low speed fan on ECT - 200

On SCT's value file that comes with the Pro Racer Package, they have the fans set as:
High speed fan high load temp to turn on - 206
High speed fan off ECT - 204
High speed fan on ECT - 210
Low speed fan off ECT - 194
Low speed fan on ECT - 200

This is stock:
High speed fan high load temp to turn on - 224
High speed fan off ECT - 224
High speed fan on ECT - 228
Low speed fan off ECT - 210
Low speed fan on ECT - 210

My 04 Cobra is stock except for a 3.1 pulley, MRT catted h-pipe and Borla S-type catback. Not too many mods.

Should I stick with the tuner’s settings or would the car run better with SCT's temps? I can’t believe the stock setting are so high. I wonder why they would do that.

It's all about emissions. The hotter temps burn more thoroughly. When I still had a stock thermostat I ran values similar to SCT's. Kept the car a little cooler, but didn't have the fans running the whole time.
