Electric power steering assist

I was looking to delete the power steering and go to a quick ratio manual OR retrofit a 2011 (electric)steering assembly, when I stumbled on this^^^

So here's my question, who makes a manual rack/pinion for our cars? The only one I found was from flaming river which is $700.

Or would a better idea just cap off the stock rack and pinion and call it a day? I could still comb the market section with this for a quick ratio.

I hated the eps when I had my '11 f150. I have a manual flaming river rack in my cobra but I don't think I paid $700 for it. Best way imo
