I was looking on lethals website and they had single disk.clutches and double disk. Can someone tell me which one is better? What is the benefit of a double disk compared to a single given the they are double the price?

Exactly. The twin disc clutches give you additional holding power while maintaining a more stock-like feel.
You can get a single disc clutch to hold a lot of power, but you lose a lot of streetability.
