Just drive it like a normal car, shift at whatever RPM you think is necessary for the conditions - there isn't any set RPM that you should shift at.

The smell isn't related to A/C, it's just part of the experience of driving a car without cats. I ran my car catless for a while and didn't like it, it sounded "badass" sometimes but it didn't really sound very good. Sounded kind of cheap/tinny and was just a loud noise at WOT. The smell at stoplights wasn't all that fun either.

I decided to weld in some bullet style hi-flow cats and have been very happy with them, the exhaust has a nice tone now, and is still very loud, but not raspy/tinny sounding.

I don't shift under 2,000 RPM because I don't want to bog the motor and/or the drivetrain. I've got the Bassani high-flow cats on mine and the only time I smell anything is when I'm running 100 octane unleaded race fuel...
