Get a wideband and set up data logging capabilities. Then do a remote street tune w a reputable tuner. Prob cost a few hundred for remote street tune.

The stock TB seems to measure across at around 5 inches just like the gt500 TB. So why wouldn't the stock coupler work? Does anyone know for sure on this?

I looked up the part number of the current reducer and it's a 5" to 4.5". The gt500 TB looks like 5" based on the vmp website so now I'm thinking that reducer will work.

I'm not a seasoned vet, but I'd take it back to your tuner or set up a datalogging rig so you can email them your logs to potentially identify the issue. Maybe the high temps while tuning threw off the tune?
