Chili cook off

Got a camping weekend up with some family friends and we're gonna do a little chili cook off competition. Love chili, but have never done much outside of basic run of the mill chili at home.

Anybody have some great recipes or wanna share any tips?

2 parts beef
1 part pork sausage
Chili seasoning
Tomato soup/can of water
Canned hot green chillies
Chili beans
Black beans (if desired)
Diced tomatoes
Chopped Green pepper
Chopped onion
Jalapeno to suit
Brown sugar (keeps the heat but tones down the burn)

Great.. now that I gave the secret away, I'm gonna have to off y'all!

Best you can buy off the shelf IMO and a good start if you want to learn to mix your own ingredients. Then tailor to taste and add whatever suits your fancy. I like tomatoes and onions in mine plus dark red kidney beans and a lot of them. Hamburger meat is the usual suspect but I like to stew some beef till it falls apart and throw that in there. Tend to cook everything but the vegetables for at least 6 hours and then add the vegetables in a few hours before it's done.

Hard to screw up chili. But if you want to take it over the top make sure you barbecue up a bunch of hot Italian sausages so the outer casing is nice and crispy glazed, cut them into discs 3/8"-1/2" thick and dump them into your chili. Give it a stir.

Sit back and watch as everyone cherry picks your secret ingredient every time they grab the ladle.

Find the best butcher in your area, ask them for the best chili seasoning they have and follow the instruction the packet, make sure to let it simmer until everything is tender.

The rotisserie chicken idea has me interested, might hav to try that.

I actually enjoy white chili more than red these days. I have a white chicken chili recipe that’s won the few chili cook offs it’s been in. PM if you would like it. It’s super easy.

I have been making chili for over 50 years, The best tip I can share is that after you have browned and drained the meat onions and garlic, stir in at least one small can of tomato paste until the meat is coated and then with the heat on med, keep stirring until the paste starts to brown.The browned paste helps make a smooth red gravy and adds another layer of flavor. Then I add my liquid, spicy hot V8 juice and some chicken broth with crushed tomatoes and Brooks Chili Hot beans.
Season with Mexene Chili Powder and a little cumin.
Work out the proportions to suit your taste.
If you like it hot you can do that a little at a time until its right

2 lb G.Beef
1 large sweet Onion
1 Grn pepper
1 tbl Salt
2 tbl Blk Pepper
Brown it

add 2-3 30 oz cans crushed tomatoes
4-8 tbl chili powder
4-8 tbl cumin lots of cumin
1 tsp garlic powder
1 tsp onion powder
3-8 tbl Brown sugar
4-5 15 oz cans of red kidney beans, black beans, lots of beans

Simmer for an hour. don't let it burn, the tomato base will make it bitter
Salt n pepper to taste

Thats a decent base recipe, tweek it to your tastes. You can't really screw up chili, chili is like pizza & sex. There's no such thing as bad chili,pizza, or sex. Some is just better than others.

I tell my wife I'm making Chili and she's like it's 95 degrees outside. I'm like...we're not eating outside...it's like 72 degrees in here.....lol. Year Round!

Find a sweet and spicy recipe. Usually at work we always do a chili cook off during winter. 7 of 10 chili’s are the same and the winner is usually someone with a recipe that’s majorly different than everything else there

Had a friend pour a 5th of JD in his. Waste of alcohol perhaps but it was interesting.

The thing about chili is that it's different everywhere you go, nobody makes it the same way. A friend has a chili party where everyone brings a quart of their chili (no pasta) then they mix it all together, always interesting.I use spicy hot V8 for the base liquid or sometimes Tabasco spicy bloody mary mix.
