It's the compression of the .gif. You lose framerates that way, making his movements in the .gif version look herky-jerky.

His arm movement looks very natural to me. I see absolutely no indications that it's fake. Unless the bird caught was on a string and not the same bird shown later in his hand. Which is not likely. I say it is real. ;-)
